The days are getting longer and warmer.  We know what that means.  Summer.  Ahhhhhhh summer!

Something about summertime makes us want to eat a little lighter. (what could it be? what. could. it. be. ??? oh, right… shorts, skirts, bikinis….)  More than that, though, spring and summer means fresh produce.  Mmmm gotta love all the fresh fruit and veggies rolling into the stores. 

One of our favorite meals that is easy, healthy and delicious are salad rolls.  We are always looking to play around with the ingredients since there is really no wrong way to do salad rolls.  Add whatever you like.  For these we added some thai chilis for a kick and mango to balance the heat.  When we made these up I was kicking myself that I didn’t have any avocado on hand.  Avocado would have made these perfect.  Learn from my mistakes please.  

And the sauce? Sooooo good!  You’ll be loving this recipe! Trust us.

Spicy Thai Chili and Mango Salad Rolls

  • Thai Basil
  • Cilantro
  • Thai chilis cut super thin
  • Lettuce
  • Mango cut into slices
  • Carrots cut into matchsticks
  • Shrimp
  • Rice Paper

Optional and highly recommended:  Avocado.  Also optional: any other protein or fruit or veggie.  I’ve had pineapple and apple in my salad rolls. Soooo good! Chicken, pork and even beef would be delicious.  Play around with your favorite flavors.

Fill a pie dish with hot water.  Dip a sheet of rice paper into the pie dish and swirl around a few times. Remove from water and set on clean surface.  Assemble ingredients onto rice paper.  Wrap up like a burrito.  If not eating immediately, put a damp paper towel onto the salad rolls and store in the fridge for later.  If not eating until the next day wrap tightly in plastic wrap and store in fridge.

Tangy Thai Dipping Sauce 

  • Lime juice 1/8 C
  • Orange juice 1/8 C
  • Fish sauce 1/8 C
  • Sweet chili sauce 1/4 C
  • Sriracha sauce 1/8 C
  • Honey 1 tbsp

Mix together and serve.
